Tips & Tricks: Easy Meals for Meal Prep

I plan out my weekly menu every Sunday evening while I order my groceries online to be delivered to my front door Monday morning. It makes my week run much more smoothly. But sometimes, I stare at my phone for far too long trying to figure out what to put on the weekly menu!

Chicken Nugget Parmesan Casserole

This dish has become a family favorite since the hardest part is boiling the noodles, it is easy to adapt to accommodate food sensitivities or preferences, and it is a breeze to reheat. Do your future self a favor by making an extra pan to freeze and reheat on a busy night!

Ingredients:

1 box of Rotini Noodles (These are easily substituted for your family’s preferred type of noodles).

1 pound frozen chicken nuggets (Keep the math easy by adding 3-4 nuggets per person being served.)

½ cup shredded mozzarella cheese.

½ cup parmesan cheese.

Instructions: 

Preheat the oven to 350 degrees Fahrenheit.

While the oven is preheating, boil the rotini noodles (or other noodles of your choice). When noodles are tender, drain and rinse.

In a casserole pan, combine noodles, chicken nuggets, marinara sauce, parmesan cheese, and mozzarella cheese. Mix until well combined.

Bake for 30-45 minutes until the cheese is thoroughly melted.

Easy Adaptations: 

Varied opinions on cheese? To accommodate cheese preferences, split ingredients in half to make two smaller casseroles. One casserole can be made without cheese.

Suspicious of chicken nuggets? Chicken nuggets can be substituted for sliced pieces of chicken breast or plant-based chicken nuggets. Although, if all else fails, the chicken nuggets are easy to pick out of the dish if needed!

Young eaters? If you have younger children who may be eating, set aside boiled noodles, shredded cheese and two chopped chicken nuggets. Rather than mixing into a casserole, you can serve these ingredients individually to younger eaters.
